Hey! My Name is Valeriia Saprina. I create edible art with a passion for detail and excellence. I’ve trained with world-renowned pastry masters like Cédric Grolet, Pierre Hermé, and Jordi Roca, learning their techniques and vision.


Blending French traditions with modern aesthetics, I craft desserts that unite flavor, texture, and elegance. For me, pastry is more than sweets — it’s an art meant to inspire and delight.


From refined entremets and couture wedding cakes to playful 3D sculptures, each creation is a moment of joy made with the finest ingredients.

I am an entrepreneur and restaurateur with a track record of building and scaling businesses in both hospitality and technology. Together with my wife and co‑founder Valeria, I moved to the United States two years ago and created Evergreen, a European‑style restaurant in Colorado Springs that quickly became the city’s most popular dining destination.

Before entering the culinary world I founded and managed an IT company and ran ventures in hospitality and specialty food retail, experiences that honed my skills in operations, finance and customer service.

Our combined passion for authentic European cuisine and innovative desserts, coupled with hands‑on leadership and a proven ability to execute, underpins our vision for Maison Rouge – a premium pastry boutique in Manhattan that will bring world‑class confections and a distinctive dining experience to the U.S. market.
OUR EXPERIENCE
Our portfolio includes over 10 successful restaurant and fast-casual projects — each created from the ground up, from concept and branding to launch and operations. All of these establishments continue to thrive today, united under one management and guided by the same philosophy of quality, aesthetics, and exceptional service.

We build concepts that go beyond openings — they evolve into recognizable brands with well-structured business systems, thoughtful menus, strong visual identity, and loyal audiences.
EVERGREEN RESTAURANT
In August 2024, we opened our first restaurant in the United States — EVERGREEN, located in Colorado Springs, Colorado.

Before launching our first U.S. restaurant, we traveled through 47 states and crossed the country three times, searching for a small city with strong potential and low competition. After finding the perfect location, we opened a restaurant offering delicious and affordable European cuisine in a beautiful, cozy setting.

Within just one year, Evergreen became one of the most popular and successful restaurants in the city. During this time, we gained deep experience in the U.S. restaurant industry, learning about local regulations, taxes, and business practices, while also adapting our recipes to suit American tastes.
We also tested our line of signature desserts, which quickly proved to be in high demand and highly appreciated by local guests — confirming our vision and paving the way for our next projects in the U.S.

CLASSIC VIBE
Maison Rouge’s interior is conceived as a refined blend of modern and classic aesthetics. The palette centres on warm beige tones accented by deep reds, creating a sense of understated luxury and continuity between the décor and the packaging of our desserts. Natural materials—rich wood surfaces, elegant wall panelling and high‑quality floor tiles—evoke the timeless charm of European cafés while providing a fresh, contemporary feel. Seating and lighting will be designed for comfort and intimacy, encouraging guests to linger. Our desserts will be displayed in premium, single‑tier refrigerated cases reminiscent of jewellery showcases, so that each pastry is presented as a work of art. Overall, the space aims to be both sophisticated and inviting: a place where modern design meets the cosy, enduring appeal of classic patisserie culture.
DESIGN CONCEPT
Our design concepts outline a cohesive thematic approach to the boutique’s interior and extend to the creation of pop‑up kiosks that carry the same aesthetic into temporary spaces.

From beautifully sculpted fruit‑mousse pastries to customizable celebration cakes and convenient travel‑boxes, every item combines elegant presentation with balanced flavours. The range of classic and adventurous praline fillings, including vegan options, shows thoughtful inclusivity and attention to quality.
Fruit Mousse Pastries
Our fruit mousse pastries are miniature works of edible art, combining visual whimsy with sophisticated flavours. Each one is crafted to resemble its namesake fruit—glossy lemons, velvety mangos, ruby‑red raspberries or cocoa beans—thanks to meticulously moulded mousse and natural glazes. Inside, layers of airy mousse, delicate sponge and complementary fillings (such as tangy lemon curd, tropical mango purée, raspberry compote, coconut cream or roasted hazelnut praline) create a balanced interplay of sweetness and acidity. Seasonal collections allow us to feature flavours like passionfruit, pear or spiced apple at their peak. Finished with a mirror‑shine glaze or velvety coating and presented in elegant packaging, these pastries are both playful and refined—perfect for an indulgent treat or as a stunning gift.

Crafted with layers of delicate mousse, sponge and ganache, each cake is tailored to the occasion—whether it’s a birthday, anniversary, wedding or other celebration. You can choose from a range of flavour combinations, from classic vanilla and rich chocolate to more adventurous pairings like mango‑passionfruit or hazelnut‑coffee. The designs are as unique as the flavours: from sleek, minimalist rounds to intricate 3‑D sculptures adorned with fresh fruit, edible flowers or bespoke decorations. Finished with a mirror glaze or velvety coating and presented in elegant packaging, these cakes are both a feast for the eyes and a perfect centrepiece for your special day.
Travel‑boxes with creamy desserts to take away
Each travel‑box is thoughtfully curated to bring the Maison Rouge experience wherever you go. Inside, you’ll find an assortment of our signature creamy desserts—think silky mousses, layered tiramisu, cheesecake parfaits or seasonal specialties—neatly arranged in individual jars or cups. The packaging is sturdy yet elegant, with secure lids and a set of spoons so you can enjoy them straight from the box. Chocolate pralines with various fillings and vegan options
Our chocolate pralines are handcrafted bites of indulgence, each one combining a crisp shell of fine dark, milk or white chocolate with a luxurious filling. The assortment spans classic flavours—creamy hazelnut gianduja, salted caramel and vanilla ganache—to more adventurous pairings like passionfruit‑coconut cream, espresso truffle or spiced almond praline. For those seeking plant‑based treats, we offer vegan options made with dairy‑free couverture and fillings based on coconut milk, nut butters and fruit purées, so you can enjoy the same decadent texture and rich taste without animal products. New York City delivery and Chelsea pick-up
Phase one focuses on establishing a strong online presence and logistics. We’ll launch web‑based and social‑media sales, invest in growing our social channels and creating engaging content, and procure custom packaging and branded materials. During this initial phase we’ll sell for delivery across New York City and offer pick‑up from a central location in the Chelsea neighborhood of Manhattan.

Pastry Boutique in Manhattan
The flagship boutique in Manhattan has opened.
We’re gearing up to open our flagship Maison Rouge boutique in Midtown Manhattan. After finalizing the lease and interior build‑out, we’ll hire and train staff and stage a soft and then grand opening. The boutique will feature our signature fruit‑mousse pastries, travel‑box desserts, chocolate pralines and special‑occasion cakes, anchoring our brand before we expand to other locations.
