OUR US PROJECT -
EVERGREEN RESTAURANT
In August 2024, we opened our first restaurant in the United States — EVERGREEN, located in Colorado Springs, Colorado.
Before launching our first U.S. restaurant, we traveled through 47 states and crossed the country three times, searching for a small city with strong potential and low competition. After finding the perfect location, we opened a restaurant offering delicious and affordable European cuisine in a beautiful, cozy setting.
Within just one year, Evergreen became one of the most popular and successful restaurants in the city. During this time, we gained deep experience in the U.S. restaurant industry, learning about local regulations, taxes, and business practices, while also adapting our recipes to suit American tastes.
We also tested our line of signature desserts, which quickly proved to be in high demand and highly appreciated by local guests — confirming our vision and paving the way for our next projects in the U.S.
In October 2025, Evergreen Restaurant was transferred to new ownership as part of a planned strategic exit, enabling the founders to redeploy capital and operational bandwidth toward launching a new flagship project in New York City.
