Hey! My Name is Valeriia Saprina. I create edible art with a passion for detail and excellence. I’ve trained with world-renowned pastry masters like Cédric Grolet, Pierre Hermé, and Jordi Roca, learning their techniques and vision.


Blending French traditions with modern aesthetics, I craft desserts that unite flavor, texture, and elegance. For me, pastry is more than sweets — it’s an art meant to inspire and delight.


From refined entremets and couture wedding cakes to playful 3D sculptures, each creation is a moment of joy made with the finest ingredients.

I am an entrepreneur and restaurateur with a track record of building and scaling businesses in both hospitality and technology. Together with my wife and co‑founder Valeria, I moved to the United States two years ago and created Evergreen, a European‑style restaurant in Colorado Springs that quickly became the city’s most popular dining destination.

Before entering the culinary world I founded and managed an IT company and ran ventures in hospitality and specialty food retail, experiences that honed my skills in operations, finance and customer service.

Our combined passion for authentic European cuisine and innovative desserts, coupled with hands‑on leadership and a proven ability to execute, underpins our vision for Maison Rouge – a premium pastry boutique in Manhattan that will bring world‑class confections and a distinctive dining experience to the U.S. market.
OUR ABROAD EXPERIENCE
Our portfolio includes over 10 successful restaurant and fast-casual projects — each created from the ground up, from concept and branding to launch and operations. All of these establishments continue to thrive today, united under one management and guided by the same philosophy of quality, aesthetics, and exceptional service.

We build concepts that go beyond openings — they evolve into recognizable brands with well-structured business systems, thoughtful menus, strong visual identity, and loyal audiences.
OUR US PROJECT -
EVERGREEN RESTAURANT
In August 2024, we opened our first restaurant in the United States — EVERGREEN, located in Colorado Springs, Colorado.

Before launching our first U.S. restaurant, we traveled through 47 states and crossed the country three times, searching for a small city with strong potential and low competition. After finding the perfect location, we opened a restaurant offering delicious and affordable European cuisine in a beautiful, cozy setting.

Within just one year, Evergreen became one of the most popular and successful restaurants in the city. During this time, we gained deep experience in the U.S. restaurant industry, learning about local regulations, taxes, and business practices, while also adapting our recipes to suit American tastes.
We also tested our line of signature desserts, which quickly proved to be in high demand and highly appreciated by local guests — confirming our vision and paving the way for our next projects in the U.S.

In October 2025, Evergreen Restaurant was transferred to new ownership as part of a planned strategic exit, enabling the founders to redeploy capital and operational bandwidth toward launching a new flagship project in New York City.

On-line sales and Wholesale
NYC local delivery and pick-up
Phase one focuses on launching production from a certified commissary kitchen, alongside securing the necessary retail and wholesale licenses. Sales will be driven through direct channels — social media and the website — while actively developing wholesale partnerships with both independent and chain cafés. In parallel, Maison Rouge plans to apply for pop-up placements at popular Manhattan markets and food halls, using these high-traffic locations to build brand visibility, test demand, and establish a strong presence within the city’s premium dessert scene.

Pastry Boutique in Manhattan
The flagship boutique in Manhattan has opened.
The next stage of the Maison Rouge project is the opening of a dedicated pastry boutique in one of New York City’s most sought-after neighborhoods — Greenwich Village, SoHo, Chelsea, or the Upper West Side. Depending on the selected location, space configuration, and the level of investment secured, the project will follow one of two paths: either relocating production and integrating it directly with the retail boutique, or continuing production at a commissary kitchen while operating the boutique as a focused retail and brand-experience space with daily deliveries. This flexible approach allows Maison Rouge to adapt efficiently to real estate opportunities while maintaining product quality and operational control.
